Roasted potatoes, red pepper and bacon salad.
Ingredients
1 lb. unpeeled, halved baby potatoes
2 strips crumbled cooked bacon
2 thinly sliced green onions
1 chopped red pepper
Balsamic vinaigrette
Olive oil
Method
Roast potatoes with 1 Tbsp olive oil in preheated 400F oven, stirring occasionally until tender, about 15 min. Toss with bacon, green onions, red pepper and some balsamic vinaigrette.
